Oysters!

I have to admit the first time I tried oysters I was very curious because I didn't quite know what to expect- my older sister fell in love with oysters when she went off to college and she had always said I needed to try them and when I went out to Philly to visit her a couple years ago she took me to an oyster bar. And after i swallowed my first Gulf oysters, it was great! they do have a different texture but I like it, and eating oysters is fun! Eating oysters now are always considered safe because of three differnt post harvest processes oysters go through. These processes allow the oyster to be consumed raw, but with added safety features that reduce Vibrio vulnificus to non-detectable levels. The three processes include 1. Individually freezing the oysters 2.low heat pasteurization or heat-cool pasteurization 3. High pressurization
